St-Rémy Cask Finish Collection celebrates our Master Blender Cécile Roudaut’s expertise in maturing St-Rémy brandy in various types of casks.
This collection is true to St-Rémy’s heritage of distilling, aging and crafting elegant French grape brandies since 1886.
Seven editions have been launched so far. Each of these rare expressions offer a unique tasting experience, a distinctive exploration of the encounter between French brandies and wood.
The first expression, “Finished in French Chardonnay Casks”, includes a maturation stage in French oak casks previously used for Chardonnay wines. This uniqueness brings fresh and fruity notes of citrus, vanilla and brioche to the brandy.
For the second release, “Finished in Cabernet-Sauvignon Casks”, the brandy has been matured in French oak casks previously used for French wines made from cabernet-sauvignon (70%), merlot and cabernet franc grapes grape varietals. This expression has notes of red berries, fresh butter, ginger and liquorice.
“Finished in Barbados Dark Rum Casks” has been launched exclusively at the LCBO in Canada. This expression includes a maturation stage in oak casks previously used for Barbados dark rum. It’s sweet and fruity with an ideal balance, combining ripe banana and toast, followed by vanilla and hot spices. The oaky notes are well-rounded with a smooth finish.
“Finished in Islay Scotch Whisky Casks“, exclusively launched at Dubai Duty Free, is matured in oak casks previously used for Islay single malt Scotch whisky. This expression is sweet with a gentle peatiness and hints of barley and citrus on the nose.
“Finished in Oloroso Sherry Casks“, includes a maturation stage in oak casks that previously held Oloroso Sherry, a fortified wine from the Jerez region of Spain. This specificity brings elegant notes of red fruits, currants, figs, dates, cooked and candied fruits.
“Finished in Sauternes Casks” includes a maturation stage in oak casks that previously held Sauternes, French sweet white wine, made mainly from semillon and sauvignon grape varietals. This edition is St-Rémy’s mellowest offering, with notes of honey, candied fruits, citrus peel and roasted notes of coffee and cocoa.
“Finished in Barbados Dark Rum Casks Batch N°2“, exclusively launched at the SAQ in Canada, gets its name from an aging stage in a new selection of drums that previously contained dark rum from Barbados. It brings to our brandy well-balanced notes of vanilla, chocolate and cocoa.
