A recipe from world-renowned mixologist Matthias Giroud, this lower-alcohol creation and its notes of apricot and rosemary are an ode to Provence.

Ingredients

  • 30 ml St-Rémy Signature
  • 120 ml Sparkling water
  • 30 ml Verjus
  • 20 ml Apricot liqueur
  • 10 ml Agave syrup
  • 1 Rosemary sprig
  • 1 oz St-Rémy Signature
  • 4 oz Sparkling water
  • 1 oz Verjus
  • 0,7 oz Apricot liqueur
  • 0,3 oz Agave syrup
  • 1 Rosemary sprig

    Pour the St-Rémy Signature, verjus, apricot liqueur and agave syrup in an ice-filled glass.

    Stir and top with sparkling water.

Appearance

Luminous, bright-amber, intensified by fiery, red sparks.

Nose

A sweet aroma of virgin wood and spices such as vanilla, coconut and almond, as well as fresh fruits.

Palate

Subtle and smooth. Virgin woody notes are enriched with honey, nut and butter flavors. Fruity notes start fresh, and then become candied. Sweet spices create roundness and balance.
